An introduction to... The Seafood Guide |

When M&J Seafood began in 1978, the range of species available to you – the chef – was very limited. But as consumption of fish and seafood has grown over the years, so has the consumers’ appetite for a wider range of species (due to the increase in international travel). As the variety of species increased (into the hundreds!), so has the challenge for modern day chefs, who now need a much greater understanding and information on what’s available and how best to use it. To support chefs and promote the greater variety (which eases pressure on UK stocks), we printed the first ‘Seafood Guide' in 2003. It has since become an industry standard used by Seafish and by other organisations around the world, and is now available here for free – an online ‘fishipedia’!
