9th February - M&J Seafood Host Craft Guild of Chef’s Alaska Seafood Challenge |
M&J Seafood, one of the leading suppliers of seafood to the foodservice sector, is delighted to be hosting the final of the Craft Guild of Chefs Alaska Seafood Challenge at their development kitchen in London’s Covent Garden on Monday 15th February.
The competition final will see three professional chefs compete for the title of Alaska Seafood Challenge Champion. The finalists will be cooking a main course for four covers featuring either Alaska Salmon, Sable Fish, or Alaskan Pollock. The judges will be looking for simple, creative recipes that bring out the succulent natural textures and flavours of Alaska seafood, while being strong profit generators.
The three finalists and their menus are: Neil Snowball Jnr, Sous Chef, for Gordon Ramsay at Claridges who will be serving braised Alaska Pollock, with warm fennel salad, crispy chicken skin, purple broccoli, truffle infused egg yolk and chicken veloute. Mr Sudha Shankar Saha, Executive Chef, Saffron Restaurant who will be serving Pan Fried Spice Scented Alaskan Salmon, Kasoori Methi flavoured baby Spinach & assorted Mushroom Bhaji, Tomato Achar, Moilee Sauce.
Robert Stordy, Chef Lecturer, University of Derby who will be serving roast Alaska Salmon Supreme, squid ink linguine, mussels, coconut & lemongrass. The winner will receive the Alaska Seafood Challenge trophy, a set of professional knives and a day’s work experience in a top restaurant kitchen. The two runners up will be awarded M&J Seafood vouchers.
